Perfect Coconut Blueberry Jigglers for a quick and fun snack. They taste delicious and are made with only the best ingredients.

  • ¼ cup Nutiva Organic Coconut Manna
  • ½ cup blueberries
  • 1 ⅓ cup water plus another ¼ cup water
  • 3 packets monk fruit extract
  • 1 pinch sea salt
  • 3 tablespoons Bernard Jensen's gelatin
  1. Blend blueberries, Coconut Manna, water, monk fruit, and sea salt for 2 minutes in a food processor.
  2. Measure ½ cup of the mixture and set aside.
  3. Simmer the rest of the mixture over medium heat for 5 minutes, then turn off and leave on the stove top.
  4. Add the gelatin to the cool mixture that was set a side and whisk.
  5. By thirds add the hot mixture into the cool mixture and keep whisking.
  6. To make sure the gelatin is fully absorbed and mixed pour the now warm mixture back into the food processor and pulse for another minute.
  7. Pour into 2 ice cube trays.
  8. Place both into the fridge for at least 1 hour.
  9. Enjoy with your favorite little (or big) person (these make a perfect finger food for babies starting at about 8-9 months old).
Can be stored in the freezer for 1 month.
Looking for a Vegan-friendly version instead? Swap out the Gelatin for Agar Agar (We recommend Eden Brand). Follow these steps: 1. 1tsp Agar Agar to 1 cup liquid. 2. Place the liquid/juice and Agar Agar powder in a pot over medium heat and bring to a boil. 3. Simmer for 2 minutes, continuously stirring with a whisk. 4. Remove from heat, let sit for 5 minutes, then pour into desired molds and refrigerate.

    Any chance there’s a vegetarian version of this recipe? I was really excited when I saw the heading because I lLOVE blueberries and I LOVE Coconut Manna. Disappointed then to find it requires gelatin. 🙁

      Hi, Donna! We have a solution for you:) Agar agar can be substituted!

      – 1tsp agar agar (Eden Brand is best) to 1 cup liquid.
      – Place the liquid/juice and agar agar powder in a pot over medium heat and bring to a boil.
      – Simmer for 2 minutes, continuously stirring with a whisk.
      – Remove from heat, let sit for 5 minutes, then pour into desired molds and refrigerate.

    I am planning to add dates to sweeten it instead of monk fruit extract. Do I have to add more water to adjust the consistency ?

      Will you be pureeing them first? We have not tried the recipe with dates. Others have used Maple Syrup and Honey, though.

    Hi, I used a tablespoon of maple syrup instead of the monk fruit and they turned out great. I also used frozen mixed berries and just dropped the 1/4 cup of water as frozen fruit always has heaps of water in it,

    I am from Portugal and certain ingredients I am not sure where to find or how to substitute like the Coconut Manna.
    Read that monk fruit can be substituted by honey – how much?
    The gelatin is powder?

      Hi! You can see if the Coconut Manna is available on You won’t need to use much honey if you want to sub it for the monk fruit. Try a tablespoon to start with, and taste to test for sweetness. And yes, the gelatin is a powder.
