Spicy Carrot Muffins with Hempseed Recipe

These Spicy Carrot Muffins are really yummy and satisfying. The Teff gives them a wholesome goodness that is high in iron, plus they are gluten-free! Enjoy! This recipe comes to us courtesy of Beth B. from Durham, NH.

Ingredients

  • 2 Cups Flax Meal
  • 1 Cup Oat Flour
  • 1 Cup Teff
  • 2 tsp Baking Powder
  • 1 Tbsp Cinnamon
  • 2 Tbsp Baking Soda
  • 1 Cup Maple Syrup
  • 11/2 Cups Coconut Milk
  • 4 Eggs
  • 5 Tbsp apple sauce
  • 4 Tbsp Nutiva Organic Hemp Oil Organic Cold-Pressed, Melted
  • 22/3 Cups Carrots Grated
  • 3-4 Tbsp Ginger Grated
  • 2 Cups raisins
  • 1/3 Cup Nutiva Organic Hempseed Shelled, Organic

Instructions

  1. Preheat oven to 350
  2. Stir wet ingredients in large bowl
  3. Mix dry ingredients in medium bowl
  4. Add dry mixture to wet and stir thoroughly.
  5. Grease muffin tins.
  6. Scoop 1/3 cup mixture into each tin.
  7. I bake the muffins for 24-25 minutes.
